Baked Salmon With Dill Mayo Recipe
When I first heard that this recipe calls for baking mayonnaise I nearly puked but I swear this is one of the best salmon recipes in my arsenal. I've never tried using low fat or non-fat so beware if you attempt to but let me know if it works.

Ingredients
  • 4 fresh Salmon fillets (pavés) approx. 1 & 1/2 inches thick
  • 1/2 cup real mayonnaise - not salad dressing!
  • 1 Tbsp fresh lemon juice
  • 2 Tbsp freshly chopped dill
  • 1 tsp freshly chopped thyme
  • 1 pinch coarse salt
  • Several grinds of white pepper
  • ***You can use whatever fresh herbs you like really, and feel free to use lime in lieu of lemon - works equally well.

Directions
  1. Preheat broiler and set your rack to the highest position.
  2. In a small bowl combine mayo, lemon juice & herbs. Set aside.
  3. Season the pavés (or salmon steaks, if you prefer) with salt and pepper. Broil for 5 minutes if at least 1 & 1/2 inches thick (if thinner, adjust time accordingly).
  4. Remove the salmon from the oven and dollop the sauce over the pavés, dividing it evenly amongst the 4 pieces. Spread over the tops but not the sides. Place back under broiler for 2-3 minutes to finish cooking (longer if the fillets are thicker). If the topping blackens, don't worry - it's still delicious and does not taste burnt at all.

I've tried the fish baked in mayo and it is always very moist and flavorful - love the fresh flavors in your sauce, and will definitely give it a try...thanks!
