How to make it

  • Clean and skin catfish and pat dry.
  • SprinĀ­ kle with salt and pepper.
  • Saute in hot bacon drippings or lard or oil over moderate heat until browned on both sides.
  • Drain fish on paper towels and place on hot serving dish.
  • Sprinkle with lemon juice and parsley.
