How to make it
- Clean and skin catfish and pat dry.
- Sprin kle with salt and pepper.
- Saute in hot bacon drippings or lard or oil over moderate heat until browned on both sides.
- Drain fish on paper towels and place on hot serving dish.
- Sprinkle with lemon juice and parsley.
