Ingredients
  • 4 pounds catfish
  • Salt and pepper
  • 1/4 cup bacon drippings or lard( or healthier oil of choosing )
  • Juice of 1 lemon
  • 1/4 cup chopped parsley

Directions
  1. Clean and skin catfish and pat dry.
  2. SprinĀ­ kle with salt and pepper.
  3. Saute in hot bacon drippings or lard or oil over moderate heat until browned on both sides.
  4. Drain fish on paper towels and place on hot serving dish.
  5. Sprinkle with lemon juice and parsley.
