Kentucky Hoppin John

- 1 lb. hot pork sausage shopping list
- 1 cup plain rice (not Minute rice) shopping list
- 1/2 stick butter or margarine shopping list
- 1 large chopped onion shopping list
- 1/2 Tbsp salt shopping list
- 1 tsp pepper shopping list
- 2 15 oz.cans black-eye peas, drained and washed shopping list
- water or chicken broth to cover in pan shopping list
How to make it
- Brown meat and drain.
- Place all ingredients in large pot.
- Pour in enough chicken broth or water to generously cover meat and rice mixture in pan.
- Bring mixture to a boil, stirring once or twice.
- Once it is boiling, place cover on pot and lower heat to simmer until done, about 18 minutes. Do not stir or lift cover while it is simmering.
- May need to add more broth or water to get consistency you want, once it is done. It can be served as a soup or thicker, as a casserole type side dish (use less liquid).
- Add additional salt and pepper to taste
- Serve with crackers
