How to make it

  • Brown meat and drain.
  • Place all ingredients in large pot.
  • Pour in enough chicken broth or water to generously cover meat and rice mixture in pan.
  • Bring mixture to a boil, stirring once or twice.
  • Once it is boiling, place cover on pot and lower heat to simmer until done, about 18 minutes. Do not stir or lift cover while it is simmering.
  • May need to add more broth or water to get consistency you want, once it is done. It can be served as a soup or thicker, as a casserole type side dish (use less liquid).
  • Add additional salt and pepper to taste
  • Serve with crackers
