Kentucky Hoppin John Recipe
This is the easiest and tastiest hopping john recipe you will ever try. It is a Southern dish that is often eaten for good luck on New Year's Day. You can make it as a soup or with less liquid as a main dish.

Ingredients
  • 1 lb. hot pork sausage
  • 1 cup plain rice (not minute rice)
  • 1/2 stick butter or margarine
  • 1 large chopped onion
  • 1/2 Tbsp salt
  • 1 tsp pepper
  • 2 15 oz.cans black-eye peas, drained and washed
  • Water or Chicken broth to cover in pan

Directions
  1. Brown meat and drain.
  2. Place all ingredients in large pot.
  3. Pour in enough chicken broth or water to generously cover meat and rice mixture in pan.
  4. Bring mixture to a boil, stirring once or twice.
  5. Once it is boiling, place cover on pot and lower heat to simmer until done, about 18 minutes. Do not stir or lift cover while it is simmering.
  6. May need to add more broth or water to get consistency you want, once it is done. It can be served as a soup or thicker, as a casserole type side dish (use less liquid).
  7. Add additional salt and pepper to taste
  8. Serve with crackers
