How to make it

  • Pound chicken breasts down to about a 1/4 of an inch thick
  • Pat dry, salt and pepper then dredge in flour, shake off excess
  • In saucepan, put 2 tbsp of butter in the pan and simmer
  • Add chicken, saute until golden brown, turn and saute the other side of chilcken
  • Remove breasts, place in baking pan and put in the oven at 350 degrees
  • In the same saucepan add remaining tbsp of butter, shallots and mushrooms, saute for about 3 to 5 minutes
  • Add wine and reduce by half
  • Add stock and reduce by half
  • Add heavy cream and reduce by half
  • Remove chicken from oven
  • Drizzle sauce over breast
  • Serve on top of rice or courcous
