Perfect if you have a little bit of leftover Chardonnay... I love this recipe, it reminds me of my Grandma's chicken..

Ingredients
  • 4 boneless Chicken Breasts, cut in half
  • 1/4 c flour
  • 3 tbsp butter
  • 1/4 c shallots (you can use an onion if you don't have shallots)
  • 1 1/4 c. mushrooms, sliced
  • 1/2 cup Chardonnay
  • 3/4 c chicken stock
  • 3/4 c heavy cream
  • Fresh Parsley, chopped
  • Salt and Pepper to Taste

Directions
  1. Pound chicken breasts down to about a 1/4 of an inch thick
  2. Pat dry, salt and pepper then dredge in flour, shake off excess
  3. In saucepan, put 2 tbsp of butter in the pan and simmer
  4. Add chicken, saute until golden brown, turn and saute the other side of chilcken
  5. Remove breasts, place in baking pan and put in the oven at 350 degrees
  6. In the same saucepan add remaining tbsp of butter, shallots and mushrooms, saute for about 3 to 5 minutes
  7. Add wine and reduce by half
  8. Add stock and reduce by half
  9. Add heavy cream and reduce by half
  10. Remove chicken from oven
  11. Drizzle sauce over breast
  12. Serve on top of rice or courcous
