Chardonnay Chicken

- 4 boneless chicken breasts, cut in half shopping list
- 1/4 c flour shopping list
- 3 tbsp butter shopping list
- 1/4 c shallots (you can use an onion if you don't have shallots) shopping list
- 1 1/4 c. mushrooms, sliced shopping list
- 1/2 cup Chardonnay shopping list
- 3/4 c chicken stock shopping list
- 3/4 c heavy cream shopping list
- fresh parsley, chopped shopping list
- salt and pepper to Taste shopping list
How to make it
- Pound chicken breasts down to about a 1/4 of an inch thick
- Pat dry, salt and pepper then dredge in flour, shake off excess
- In saucepan, put 2 tbsp of butter in the pan and simmer
- Add chicken, saute until golden brown, turn and saute the other side of chilcken
- Remove breasts, place in baking pan and put in the oven at 350 degrees
- In the same saucepan add remaining tbsp of butter, shallots and mushrooms, saute for about 3 to 5 minutes
- Add wine and reduce by half
- Add stock and reduce by half
- Add heavy cream and reduce by half
- Remove chicken from oven
- Drizzle sauce over breast
- Serve on top of rice or courcous
