How to make it

  • In a crockpot, place carrots, pepper and onion. Top with chicken. Sprinkle with salt. Pour sweet and sour sauce and pineapple over all.
  • Cook on low 7 to 8 hours (high 3 1/2 to 4 hours).
  • Remove chicken.
  • Blend cornstarch and water.
  • Stir in juices.
  • Cover and cook on high for 10 to 15 minutes, until thickened.
  • Season to taste with salt and pepper.
  • Serve with chicken over rice.
