RICOTTA CAKE Recipe
This is a moist delicious cake that is a spin-off of the more fattening version "Ricotta Pie". Everyone loves this cake. I've taken most of the fat and sugar out of it.

Ingredients
  • 1 Package of Yellow Cake Mix (Any Brand)
  • 1 Lg (32 oz) Container of Ricotta Cheese, Part Skim
  • 1-3/4 Cups Egg Beaters
  • 1/2 Cup Splenda Blend
  • 1/3 Cup Canola Oil
  • 1-1/4 Cups Water
  • 1 Teaspoon Vanilla

Directions
  1. Spray a 9 x 13 pan with Pam and preheat oven to 350 degrees.
  2. In a large mixing bowl blend cake mix, water, oil and 3/4 cup egg beaters.
  3. Pour mixture into prepared pan.
  4. In a medium bowl mix ricotta cheese, splenda blend, 1 cup egg beaters and vanilla.
  5. Pour evenly over the top of the cake batter. Do not mix...
  6. Bake for 1 hour. Cool, chill and enjoy.

I have never tried a Ricotta Cake. Sure sounds delicious, so I will try this one for sure.
