Tuna And White Bean Salad Recipe

Ingredients

2 6 1/8 ounce cans light tuna in olive oil

2 tablespoons red wine vinegar

1/2 teaspoon minced garlic

2 teaspoons fresh thyme, chopped OR 1/2 teaspoon dried

1/2 teaspoon salt

1/2 teaspoon pepper

2 15 ounce cans cannellini (white kidney) beans, rinsed and drained

1 large red bell pepper, seeded and cut in 1/2" pieces

Directions

Drain 2 tablespoons oil from tuna into a large bowl.

Discard remaining oil.

Whisk in vinegar, garlic, thyme, salt and pepper.

Break tuna into large chunks.

Add to bowl with remaining ingredients.

Toss gently to mix.

Yeah- italians actually make a salad with vinaigrette and then add tuna to it...
this is how my mom made it when i was growing up...
and we never had it as a sandwich...

you didn't actually include lettuce as part of the recipe-even though it's there in the pic..

i think escarole would be a nice hearty green to use with this...it's also very italian..
and i think i would use those tiny white beans instead of canellini which i find VERY starchy...

overall i really like this recipe-
