This cocktail champagne is pleasing to the eye and is simple to make. Why not try it for Valentine's Day!

  • 2 small boxes grape flavoured or sparkling gelatin
  • 2 cups boiling water
  • 2 cups champagne
  • 8 strawberries, washed, hulled leave stems on
  • 8 champagne flutes

Directions
  1. In a large bowl, dissolve gelatin in boiling water; allow to cool for 10 minutes.
  2. Stir in champagne and chill 40 to 50 minutes, or until slightly thickened.
  3. Reserve 1 cup of gelatin mixture and spoon remaining mixture evenly into 8 champagne flutes.
  4. Place 1 strawberry in each glass.
  5. In a small bowl, beat the reserved 1 cup gelatin mixture until fluffy and doubled in volume.
  6. Spoon evenly into glasses; cover and chill for at least 2 hours, or until set.

This is adorable and just in time for Valentines day which happens to be my anniversary I will have to make this for the lady.

Any ideas where i can get hold of sparkling gelatin cant seem tofind any


Try your local grocery store. Sparkling Jello is still available in Canada. If you cannot find it, try using your favourite jello flavour and replace the water with Sprite, 7-Up or Gingerale for the fizzy.
