Chicken Carbonara

- 1 Pound spaghetti shopping list
- 4 Ounces bacon, diced shopping list
- 1 Medium onion, diced shopping list
- 1-1/2 Cups heavy cream shopping list
- 4 chicken breasts shopping list
- 2 Tbsp butter shopping list
- 1/2 Cup grated mozzarella cheese (save a little to top chicken breasts with) shopping list
- salt and pepper, to taste shopping list
- 4 egg yolks shopping list
- Some chopped parsley shopping list
How to make it
- 1. Cook spaghetti in boiling water for 10 minutes.
- 2. In a large saucepan, saute the bacon bits until golden.
- 3. Drain off some drippings and add butter, chicken breasts and onion, and cook until chicken is tender. Remove chicken to separate dish and keep warm.
- 4. Drain spaghetti and place into pan with bacon and drippings.
- 5. Add cream, salt and pepper, stir well over heat until just boiling.
- 6. Add the cheese and egg yolks, stir well. Turn off heat.
- 7. Put a little of the sauce on top of each chicken breast, cover with mozzarella cheese and broil until cheese is hot and bubbly.
- 8. Divide pasta between four plates. Place a breast on each plate, top with chopped parsley. Serve immediately.
