How to make it

  • Sauce:
  • Puree first 6 ingredients in processor until almost smooth.
  • Add onion and process until finely chopped but not ground.
  • Season cilantro sauce generously with salt and pepper.
  • (Can be prepared 1 day ahead. Transfer to small bowl, cover and refrigerate.)
  • Beef and Peppers:
  • Preheat broiler. Place beef and red bell peppers in separate bowls.
  • Mix enough oil into beef and into bell peppers to coat.
  • Spread beef out on large baking sheet; sprinkle with salt and pepper.
  • Spread peppers out on another large baking sheet; sprinkle with salt and pepper.
  • Broil beef to desired doneness, about 3 minutes per side for medium-rare.
  • Broil peppers until just tender and beginning to brown, about 3 minutes.
  • Skewer 1 beef cube and 1 pepper square with toothpick.
  • Repeat with remaining beef and pepper.
  • Arrange on platter and serve with cilantro sauce.
  • This might be easier if done on the barby...skewer first then grill. I would probably parboil the peppers, then pat dry and put on skewer.
  • Lots of cracked black pepper would go on the meat!
