Beef Bites With Red Bell Peppers And Cilantro Sauce

- Sauce: shopping list
- 2 cups packed, stemmed fresh cilantro(2 to 3 large bunches) shopping list
- ½ cup olive oil shopping list
- 3 Tbsps. Fresh lime juice shopping list
- 1 Tbsp. chopped jalapeno chile shopping list
- 1 ½ tsp. dried oregano shopping list
- 1 large garlic clove, chopped shopping list
- ¼ cup coarsely chopped red onion shopping list
- salt and pepper to taste shopping list
- beef and Bell Peppers: shopping list
- 4 lbs. beef tenderloin cut into 1-inch cubes (about 48 cubes) shopping list
- 2 large red bell peppers, halved, seeded, cut into 1-inch squares shopping list
- olive oil shopping list
How to make it
- Sauce:
- Puree first 6 ingredients in processor until almost smooth.
- Add onion and process until finely chopped but not ground.
- Season cilantro sauce generously with salt and pepper.
- (Can be prepared 1 day ahead. Transfer to small bowl, cover and refrigerate.)
- Beef and Peppers:
- Preheat broiler. Place beef and red bell peppers in separate bowls.
- Mix enough oil into beef and into bell peppers to coat.
- Spread beef out on large baking sheet; sprinkle with salt and pepper.
- Spread peppers out on another large baking sheet; sprinkle with salt and pepper.
- Broil beef to desired doneness, about 3 minutes per side for medium-rare.
- Broil peppers until just tender and beginning to brown, about 3 minutes.
- Skewer 1 beef cube and 1 pepper square with toothpick.
- Repeat with remaining beef and pepper.
- Arrange on platter and serve with cilantro sauce.
- This might be easier if done on the barby...skewer first then grill. I would probably parboil the peppers, then pat dry and put on skewer.
- Lots of cracked black pepper would go on the meat!
