Curried Lentils And Couscous

- 1-1/2 cup lentils shopping list
- 1-1/4 cup couscous shopping list
- 1 carrot shopping list
- 1 red pepper shopping list
- 4 or 5 garlic cloves shopping list
- about 1 tablespoon minced fresh ginger shopping list
- 1/4 teaspoon cinnamon shopping list
- 1/4 teaspoon cayenne pepper shopping list
- salt to taste shopping list
- fresh-ground black pepper shopping list
- olive oil shopping list
How to make it
- Bring lentils, ginger and about 4 cups water to boil; reduce heat
- and cover.
- Simmer over low heat till lentils are cooked (about 1/2 hour).
- Chop carrot, pepper & garlic and fry.
- Add 1-1/4 cup boiling water to couscous, cover, and leave 5 min.
- Mix all ingredients together with some olive oil.

I like the combinations, but not crazy about couscous. I'll substitute pastina. Gave it 5!
