Cashew Shrimp Supreme Recipe
This is incredible. This comes from my cousin Sue's collection. She serves this at family gatherings and it is a huge hit. Enjoy

Ingredients
  • 1 pound medium shrimp peeled and deveined
  • 1 tablespoon plus 1 teaspoon cornstarch
  • 1/4 teaspoon granulated sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup vegetable oil
  • 1/2 cup chopped white onion
  • 1/2 cup chopped sweet red pepper
  • 1 small clove garlic minced
  • 1 cup diced zucchini
  • 3-1/2 cups cooked rice
  • 3/4 cup cashews
  • Sweet red bell pepper rings

Directions
  1. Cut shrimp in half lengthwise and reserve.
  2. In a medium bowl combine cornstarch, sugar, baking soda, salt and pepper.
  3. Add shrimp and toss gently to coat then allow to stand 15 minutes.
  4. Heat oil in a large skillet then add shrimp and stir fry 5 minutes.
  5. Remove shrimp and set aside then drain off all but 2 tablespoons oil.
  6. Stir fry onion, pepper and garlic in oil remaining in skillet.
  7. Add zucchini and stir fry 2 minutes then stir in shrimp, rice and cashews.
  8. Cook over low heat stirring until heat through then spoon into serving dish.
  9. Garnish with red pepper rings and serve immediately.
