Cashew Shrimp Supreme

- 1 pound medium shrimp peeled and deveined shopping list
- 1 tablespoon plus 1 teaspoon cornstarch shopping list
- 1/4 teaspoon granulated sugar shopping list
- 1/4 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1/2 cup vegetable oil shopping list
- 1/2 cup chopped white onion shopping list
- 1/2 cup chopped sweet red pepper shopping list
- 1 small clove garlic minced shopping list
- 1 cup diced zucchini shopping list
- 3-1/2 cups cooked rice shopping list
- 3/4 cup cashews shopping list
- Sweet red bell pepper rings shopping list
How to make it
- Cut shrimp in half lengthwise and reserve.
- In a medium bowl combine cornstarch, sugar, baking soda, salt and pepper.
- Add shrimp and toss gently to coat then allow to stand 15 minutes.
- Heat oil in a large skillet then add shrimp and stir fry 5 minutes.
- Remove shrimp and set aside then drain off all but 2 tablespoons oil.
- Stir fry onion, pepper and garlic in oil remaining in skillet.
- Add zucchini and stir fry 2 minutes then stir in shrimp, rice and cashews.
- Cook over low heat stirring until heat through then spoon into serving dish.
- Garnish with red pepper rings and serve immediately.
