Sweet And Sour Fish

- 3 Tb cooking oil shopping list
- 1/2 lb fresh cod (a thick, long slice) shopping list
- 1 ea egg shopping list
- 1/4 c cornstarch shopping list
- 8 oz can pineapple chunks shopping list
- 1 ea carrot, halved and thin sliced shopping list
- 1 med onion, quartered shopping list
- 3 inch piece of ginger root, finely minced shopping list
- 1/2 ea green bell pepper, cut into 3/4-in sqrs. shopping list
- 1/2 ea red bell pepper, cut into 3/4-in sqrs. shopping list
- 2 cloves garlic, chopped shopping list
- 1/4 cup light Karo syrup shopping list
- 1 Tb cornstarch shopping list
- 2 Tb cider vinegar (or white wine vinegar) shopping list
- 1 1/2 Tb soy sauce shopping list
- 1 Tb catsup shopping list
- cooked rice shopping list
How to make it
- In a small bowl, mix the Karo syrup, cornstarch, vinegar of preference, soy sauce, and catsup. Set aside.
- Cut the vegetables and set aside. Keep separate, as they will be added at different times.
- Cut the fish slice into 1 1/4-inch squares.
- Break the egg into a paper plate and blend the white and yolk with a fork. Place 1/4 cup cornstarch in a separate small bowl.
- Heat the oil in your skillet.
- Lightly salt fish chunks. Dip fish pieces in egg, then in cornstarch until covered, and drop into the hot skillet. Fry on high heat until the outside begins to brown. (tip: use two spatulas to lightly toss the fish) Do not overcook, but remove and set aside when the fish just begins to separate..
- Add additional oil if necessary. Stir fry the ginger root, garlic, onion and carrot for 5 minutes. Add the peppers and continue to cook for an additional 3-5 minutes.
- Add the Karo syrup mixture, blend with the veggies until it begins to thicken, then add in the fried fish.
- Serve over cooked rice.
