succulent roasted chicken with root vegetables

- A 3 1/2 -4 lb. roasting chicken shopping list
- 4 T. butter softened shopping list
- 2 cloves of garlic minced shopping list
- 1/2 t dried thyme shopping list
- zest of 1 lemon shopping list
- 2 sprigs of rosemary shopping list
- 4 red potatoes shopping list
- 1 onion shopping list
- 1 turnip shopping list
- 2 carrotts shopping list
- 1 lemon shopping list
- olive oil shopping list
- salt and pepper to taste shopping list
How to make it
- rinse chicken and pat dry
- combine butter garlic, thyme, zest, and leaves from 1/2 a sprig of rosemary
- loosen skin on chicken and rub butter between meat and skin rub remaining butter on outside skin of the chicken
- peal veggies and place in a bowl toss with olive oil to coat add salt and pepper to taste place in roasting pan
- cut lemon in half and place in the cavity of the chicken along with the remaining rosemary
- place chicken on veggies and place in a 375 degree oven for 2- 2/12 hours or until juices run clear
- remove from oven and allow chicken to rest
- serve with veggies
