Succulent Roasted Chicken With Root Vegetables Recipe
This is my favorite way to roast a chicken. It has to be one of my all time favorite comfort meals

Ingredients
  • A 3 1/2 -4 lb. roasting chicken
  • 4 T. Butter softened
  • 2 cloves of garlic minced
  • 1/2 t dried thyme
  • zest of 1 lemon
  • 2 sprigs of rosemary
  • 4 red potatoes
  • 1 onion
  • 1 turnip
  • 2 carrotts
  • 1 lemon
  • olive oil
  • salt and pepper to taste

Directions
  1. rinse chicken and pat dry
  2. combine butter garlic, thyme, zest, and leaves from 1/2 a sprig of rosemary
  3. loosen skin on chicken and rub butter between meat and skin rub remaining butter on outside skin of the chicken
  4. peal veggies and place in a bowl toss with olive oil to coat add salt and pepper to taste place in roasting pan
  5. cut lemon in half and place in the cavity of the chicken along with the remaining rosemary
  6. place chicken on veggies and place in a 375 degree oven for 2- 2/12 hours or until juices run clear
  7. remove from oven and allow chicken to rest
  8. serve with veggies
  9. Enjoy
