How to make it

  • rinse chicken and pat dry
  • combine butter garlic, thyme, zest, and leaves from 1/2 a sprig of rosemary
  • loosen skin on chicken and rub butter between meat and skin rub remaining butter on outside skin of the chicken
  • peal veggies and place in a bowl toss with olive oil to coat add salt and pepper to taste place in roasting pan
  • cut lemon in half and place in the cavity of the chicken along with the remaining rosemary
  • place chicken on veggies and place in a 375 degree oven for 2- 2/12 hours or until juices run clear
  • remove from oven and allow chicken to rest
  • serve with veggies
  • Enjoy
