How to make it

  • Remove all outside loose and bad leaves. Cut cabbage into quarters and remove stalks.
  • Shred or slice cabbage finely and place in a large bowl. Add shallots, parsley, salt, pepper, oil and vinegar. Toss well with clean hands and transfer to a bowl.
  • Make this salad one or two hours prior to serving so cabbage can marinade.

    All the cooks in my family make this coleslaw or a variation of it. I leave out the onions, add a little red cabbage for color, and a little sugar and call it Kraut Salat.
