Tuna Patties With Dill Sauce

- PATTIES: shopping list
- 2 parsnips, peeled and cut into 1/2" slices shopping list
- 2 egg whites, lightly beaten shopping list
- 1/2 cup soft bread crumbs shopping list
- 1/4 cup green onions, finely chopped shopping list
- 1 tablespoon dried parsley flakes shopping list
- 2 teaspoon lemon juice shopping list
- 1/2 teaspoon lemon zest shopping list
- 1/2 teaspoon dill shopping list
- 1/4 teaspoon pepper shopping list
- 1 (6 ounce) cans light water-packed albacore tuna, drained and flaked shopping list
- 2 teaspoons olive OR canola oil shopping list
- dill SAUCE: shopping list
- 1/2 cup mayonnaise shopping list
- 1 teaspoon lemon juice shopping list
- 1 teaspoon lemon zest shopping list
- 1/2 teaspoon dill shopping list
How to make it
- Place parsnips in water, bring to a boil.
- Reduce heat, cover and simmer for 30 to 35 minutes until tender.
- Drain well.
- Place parsnips in processor and puree.
- Combine 1 cup pureed parsnips, egg whites, bread crumbs, onion, parsley, lemon juice and zest, dill and pepper.
- Add tuna and mix well.
- Shape into eight 1/2" thick patties (patties will be soft).
- In large nonstick skillet heat oil over medium heat.
- Saute patties for 5 to 6 minutes on a side until lightly browned.
- Combine sauce ingredients in small bowl.
- Serve with patties.
