Ingredients

How to make it

  • Place parsnips in water, bring to a boil.
  • Reduce heat, cover and simmer for 30 to 35 minutes until tender.
  • Drain well.
  • Place parsnips in processor and puree.
  • Combine 1 cup pureed parsnips, egg whites, bread crumbs, onion, parsley, lemon juice and zest, dill and pepper.
  • Add tuna and mix well.
  • Shape into eight 1/2" thick patties (patties will be soft).
  • In large nonstick skillet heat oil over medium heat.
  • Saute patties for 5 to 6 minutes on a side until lightly browned.
  • Combine sauce ingredients in small bowl.
  • Serve with patties.

    Hey, I've made that dill sauce, too! I got the same recipe out of an old community cookbook, and it's great with fish, tuna or crab patties, on a baloney sandwich, you name it. Or with just a spoon, like I... I mean, I don't know who would do that! You can still post the sauce separately - the one I found was called Dilled Mayonnaise.
