Tuna Patties With Dill Sauce Recipe

From Taste of Home Test Kitchen via allrecipes, these patties use parsnips in place of some of the bread crumbs normally used in fish cakes. The parsnips add moisture, fiber and extra nutrition.

Ingredients
  • PATTIES:
  • 2 parsnips, peeled and cut into 1/2" slices
  • 2 egg whites, lightly beaten
  • 1/2 cup soft bread crumbs
  • 1/4 cup green onions, finely chopped
  • 1 tablespoon dried parsley flakes
  • 2 teaspoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon dill
  • 1/4 teaspoon pepper
  • 1 (6 ounce) cans light water-packed albacore tuna, drained and flaked
  • 2 teaspoons olive OR canola oil
  • DILL SAUCE:
  • 1/2 cup mayonnaise
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon dill

Directions
  1. Place parsnips in water, bring to a boil.
  2. Reduce heat, cover and simmer for 30 to 35 minutes until tender.
  3. Drain well.
  4. Place parsnips in processor and puree.
  5. Combine 1 cup pureed parsnips, egg whites, bread crumbs, onion, parsley, lemon juice and zest, dill and pepper.
  6. Add tuna and mix well.
  7. Shape into eight 1/2" thick patties (patties will be soft).
  8. In large nonstick skillet heat oil over medium heat.
  9. Saute patties for 5 to 6 minutes on a side until lightly browned.
  10. Combine sauce ingredients in small bowl.
  11. Serve with patties.

Hey, I've made that dill sauce, too! I got the same recipe out of an old community cookbook, and it's great with fish, tuna or crab patties, on a baloney sandwich, you name it. Or with just a spoon, like I... I mean, I don't know who would do that! You can still post the sauce separately - the one I found was called Dilled Mayonnaise.
