Tom Ka Gai Coconut Chicken Soup

- 3/4 pound boneless, skinless chicken meat shopping list
- 3 tablespoons vegetable oil shopping list
- 28 ounces canned coconut milk shopping list
- 2 cups water shopping list
- 2 tablespoons fresh ginger root, minced shopping list
- 4 tablespoons fish sauce shopping list
- 1/4 cup fresh lime juice shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 1/2 teaspoon ground turmeric shopping list
- 2 tablespoons green onion, thinly sliced shopping list
- 1 tablespoon fresh cilantro, chopped shopping list
How to make it
- Cut chicken meat into thin strips and saute in oil for 2 to 3 minutes until chicken turns opaque.
- In a pot, bring coconut milk and water to a boil.
- Reduce heat.
- Add ginger, fish sauce, lime juice, cayenne pepper and turmeric.
- Simmer until the chicken is done, 10 to 15 minutes.
- Sprinkle with scallions and fresh cilantro.
- Serve steaming hot.
