Mixed Baby Greens With Onion And Oranges Recipe
The juices from the supremed oranges basically create the dressing for this salad that will compliment almost any meal!

Ingredients
  • 1/2 large red onion
  • 3 medium juice oranges
  • 3 small blood oranges
  • 3 tbsp extra virgin olive oil
  • 1 splash red wine vinegar
  • Salt and pepper to taste
  • 1 bag mixed baby greens

Directions
  1. Thinly slice onion. Place in bottom of a large salad bowl.
  2. With a paring knife, cut off peel and white pith of oranges. Over the salad bowl, section the oranges by cutting the segments in between the membranes (this is called supreming). Squeeze the remains over the bowl.
  3. Give two generous turns of olive oil over the bowl, about 3 tablespoons. Add a pinch of salt and several cranks of ground black pepper to taste. Add one splash of red wine vinegar to taste.
  4. Toss everything together, taste dressing, and adjust salt, pepper, and vinegar to your preference. Let this onion and orange mixture sit until ready to serve. The longer the onions sit in the orange juice, the more mellow they become.
  5. Place the mixed baby greens on top of the onions and oranges, and toss to evenly coat with the dressing.

I love this!!! Mixed baby greens are my favorite salad greens.


I made this last night to serve with some seafood liguine I made and it was absolutely delicious. Great post. I couldn't find blood oranges at the store so I used navel oranges. I'm thinkin about using some grapefruit along with the oranges the next time I make this.


I'm so glad you liked it! Yeah, blood oranges aren't always in the stores around here, either, so regular navel or juice oranges work equally well. The first time I made it I used blood and Cara Cara oranges.


I have a blood orange tree in my backyard and it's loaded with green oranges...will probably ripen in Nov. or Dec. I also have a pomegranate tree(really more like a bush) and they should be ready in October...so I'll bookmark this salad and when I make it, I'll sprinkle on pomegranate seeds! Thanks for the post!
