- 4 tablespoons olive oil shopping list
- 1 white onion chopped shopping list
- 1 garlic clove minced shopping list
- 1 small red bell pepper cut into 1" pieces shopping list
- 2 cups raw brown rice shopping list
- 1 teaspoon minced fresh ginger root shopping list
- 1/4 teaspoon ground cloves shopping list
- 3/4 teaspoon ground cinnamon shopping list
- 1/2 teaspoon ground cumin shopping list
- 4 cups boiling water shopping list
- 1 cup fresh green beans cut in 1-1/2" pieces shopping list
- 1 cup carrots cut in 1-1/2" strips shopping list
- 3/4 cup broccoli florets shopping list
- 3/4 cup cauliflower florets shopping list
- 1 cup diced potato shopping list
- 1/2 cup fresh peas shopping list
- 1/2 cup unsalted cashews shopping list
How to make it
- Heat 3 tablespoons of the olive oil in a large heavy saucepan over medium heat.
- Sauté onion, garlic and red pepper for 5 minutes.
- Add rice and stir until it is coated with oil.
- Add ginger, cloves, cinnamon, cumin and stir over medium heat for 2 minutes.
- Add boiling water.
- As soon as water returns to boil add green beans, carrots, broccoli, cauliflower, potato, and peas.
- Cover and gently simmer the mixture for 45 minutes until rice is tender.
- Immediately before serving heat the remaining tablespoon olive oil in a skillet over medium heat.
- Sauté nuts until they are slightly toasted.
- Sprinkle over baryonic and serve immediately.
