I'm not a big fan of broiled fish but slathered in some of this sauce... it's too tasty to resist. Be sure to de-seed all of the peppers. They are too bitter and ruin the texture and flavour of this sauce.

Ingredients
  • 1-5 Habanero peppers (Scotch Bonnets) *use gloves when handling
  • 1/2 green bell pepper - chunks
  • 1/2 red bell pepper - chunks
  • 1 Anaheim or Poblano pepper - chunks
  • 1 long Banana pepper - chunks
  • 3 Jalapeños - quartered
  • 2 Thai Bird's Eye or Dragon peppers
  • 1/2 red onion - peeled, chunks
  • 15 garlic cloves - peeled
  • 1 tsp coarse salt
  • 1/4 cup Olive oil**
  • ***Use whichever peppers you like or can find - this is just a general guideline. Be sure to remove all of the seeds to avoid a bitter-tasting sauce.

Directions
  1. In a food processor with the blade running, drop the garlic cloves in to finely chop.
  2. Add the onion and all of the sweet peppers. Blend 30 seconds.
  3. Open your windows!
  4. Drop in the habaneros and other hot peppers - stand away from the feeding tube while you do this.
  5. **Add olive oil to loosen. I use about 1/4 cup but you can use as little as 3 Tbsp and up to 2 cups, depending on your desired consistency or health concerns.
  6. Blend until well puréed - approx. 1 minute.
  7. Pour into saucepan and add salt.
  8. Bring to a boil, lower and simmer for 10-15 minutes.
  9. Ideally you want this sauce to sit a week or so before eating to allow it to mellow. This will keep in the fridge for several weeks. Eat with EVERYTHING!

I haven't heard of a few of those peppers but will as you say use whatever I can find - looking forward to trying this one -it DOES sound very yummy.BBQ season is upon us in New zealands and think this would go down very well with BBQ'd chicken and steaks too
