Sweet Potato Spice Cake With Rum Cream Cheese Frosting

- 2-1/2 cups flour shopping list
- 2-1/2 teaspoons baking powder shopping list
- 1-1/2 teaspoons baking soda shopping list
- 1 teaspoon salt shopping list
- 3/4 teaspoon ground cinnamon shopping list
- 1/2 teaspoon ground cloves shopping list
- 1/2 teaspoon ground allspice shopping list
- 1/2 teaspoon ground nutmeg shopping list
- 3/4 cup butter softened shopping list
- 3/4 cup granulated sugar shopping list
- 3/4 cup brown sugar shopping list
- 3 eggs shopping list
- 1 teaspoon vanilla extract shopping list
- 3/4 cup milk shopping list
- 3/4 cup coarsely grated fresh sweet potatoes shopping list
- 1/2 cup chopped almonds shopping list
- 1/2 cup raisins shopping list
- whole almonds for garnish shopping list
- Frosting: shopping list
- 3 ounce package cream cheese softened shopping list
- 2 cups sifted powdered sugar shopping list
- 3/4 teaspoon rum flavoring shopping list
How to make it
- Sift dry ingredients together and set aside.
- Cream butter, sugars, eggs and vanilla together until fluffy.
- Blend in dry ingredients alternately with milk mixing well after each addition.
- Fold in sweet potatoes, nuts and raisins then pour into greased and floured tube pan.
- Bake at 350 for 45 minutes then cool on wire rack 15 minutes.
- Invert onto serving plate and cool completely then frost with frosting and garnish with almonds.
- For frosting beat all frosting ingredients together until smooth and of spreading consistency.
