How to make it

  • Beat together eggs, oil, sugar & vanilla until mixed well.
  • Blend in the zucchini.
  • Add dry ingredients (flour, baking powder, baking soda) slowly (1 cup at a time) and mix well.
  • Stir in pineapple, nuts & raisins
  • Pour into greased and floured loaf pan(s) and bake approximately 1 hour at 350. (Small individual size pans will take less baking time)
