Zucchini Pineapple Bread

- • 3 eggs shopping list
- • 2 cups sugar shopping list
- • 1 cup Vegtable oil or applesauce shopping list
- • 1 1/2 teaspoons vanilla shopping list
- • 2 cups Grated zucchini shopping list
- • 1 cup crushed pineapple, drained shopping list
- • 1/2 cup raisins shopping list
- • 1 cup walnuts (optional or substitute other nuts) shopping list
- • 3 cups flour shopping list
- • 1 teaspoon baking powder shopping list
- • 1 teaspoon baking soda shopping list
How to make it
- Beat together eggs, oil, sugar & vanilla until mixed well.
- Blend in the zucchini.
- Add dry ingredients (flour, baking powder, baking soda) slowly (1 cup at a time) and mix well.
- Stir in pineapple, nuts & raisins
- Pour into greased and floured loaf pan(s) and bake approximately 1 hour at 350. (Small individual size pans will take less baking time)
