Ingredients
  • • 3 eggs
  • • 2 cups Sugar
  • • 1 cup Vegtable oil or applesauce
  • • 1 1/2 teaspoons Vanilla
  • • 2 cups Grated zucchini
  • • 1 cup Crushed pineapple, drained
  • • 1/2 cup Raisins
  • • 1 cup walnuts (optional or substitute other nuts)
  • • 3 cups Flour
  • • 1 teaspoon Baking Powder
  • • 1 teaspoon Baking soda

Directions
  1. Beat together eggs, oil, sugar & vanilla until mixed well.
  2. Blend in the zucchini.
  3. Add dry ingredients (flour, baking powder, baking soda) slowly (1 cup at a time) and mix well.
  4. Stir in pineapple, nuts & raisins
  5. Pour into greased and floured loaf pan(s) and bake approximately 1 hour at 350. (Small individual size pans will take less baking time)
