How to make it

  • Score the chicken pieces
  • Melt the butter on a heavy pan
  • Add the onion and saute until the onion is translucent
  • Add the Berbere powder
  • Saute an additional 5 minutes
  • Add the chicken stock and tomato paste, simmer low for 10 minutes
  • Add the chicken, coating well in the mixture.
  • Cover and simmer for 30 minutes
  • Laddle 1/2 c of the liquid into a bowl
  • Stir in the peanut butter with the removed liquid
  • Stir in with the chicken
  • Score the eggs and add to the pot
  • Cook 5 minutes more and serve
  • The chicken will be very tender. One egg per serving.
