Doro Wat - Chicken in Peanut Sauce

- 1 teas Berbere spice (blend 1 T cayenne, 1/2 teas cinnamon, 1/4 teas ground clove) shopping list
- 3 lbs chicken, cut into 8-10 pieces, skin removed shopping list
- 2 onions, chopped shopping list
- 1/3 c butter shopping list
- 1/2 c chicken stock shopping list
- 1/3 c creamy peanut butter shopping list
- 3 oz tomato paste shopping list
- 1/2 teas cracked pepper shopping list
- 6 hard boiled eggs, shells removed shopping list
How to make it
- Score the chicken pieces
- Melt the butter on a heavy pan
- Add the onion and saute until the onion is translucent
- Add the Berbere powder
- Saute an additional 5 minutes
- Add the chicken stock and tomato paste, simmer low for 10 minutes
- Add the chicken, coating well in the mixture.
- Cover and simmer for 30 minutes
- Laddle 1/2 c of the liquid into a bowl
- Stir in the peanut butter with the removed liquid
- Stir in with the chicken
- Score the eggs and add to the pot
- Cook 5 minutes more and serve
- The chicken will be very tender. One egg per serving.
