Doro Wat - Chicken In Peanut Sauce Recipe
This is a traditional dish on northern Africa. You can find Berbere spice at some big grocery stores or use the simply blend in the recipe. Serve with rice or couscous.

Ingredients
  • 1 teas Berbere spice (blend 1 T cayenne, 1/2 teas cinnamon, 1/4 teas ground clove)
  • 3 lbs chicken, cut into 8-10 pieces, skin removed
  • 2 onions, chopped
  • 1/3 c butter
  • 1/2 c chicken stock
  • 1/3 c creamy peanut butter
  • 3 oz tomato paste
  • 1/2 teas cracked pepper
  • 6 hard boiled eggs, shells removed

Directions
  1. Score the chicken pieces
  2. Melt the butter on a heavy pan
  3. Add the onion and saute until the onion is translucent
  4. Add the Berbere powder
  5. Saute an additional 5 minutes
  6. Add the chicken stock and tomato paste, simmer low for 10 minutes
  7. Add the chicken, coating well in the mixture.
  8. Cover and simmer for 30 minutes
  9. Laddle 1/2 c of the liquid into a bowl
  10. Stir in the peanut butter with the removed liquid
  11. Stir in with the chicken
  12. Score the eggs and add to the pot
  13. Cook 5 minutes more and serve
  14. The chicken will be very tender. One egg per serving.
