Grilled Mustard Chicken Recipe
GRILLED MUSTARD CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Huey Estate in Richardson, Texas in 1988.

Ingredients
  • 2 large whole chicken breasts skinned boned and halved
  • 1/3 cup fresh lime juice
  • 1 tablespoon grated lime peel
  • 1 clove garlic smashed
  • 1/4 cup Dijon mustard
  • 1/4 cup chopped fresh basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground pepper

Directions
  1. Combine all ingredients except chicken in a bowl.
  2. Arrange chicken pieces in shallow glass dish that will hold all chicken in one layer.
  3. Pour marinade over the top and turn chicken pieces until all pieces are thoroughly coated.
  4. Cover and marinate three hours in the refrigerator then heat barbeque to medium.
  5. Shake marinade from chicken pieces and grill 6 minutes per side then serve at once.
