Old Fashioned Chicken Croquettes Recipe
OLD FASHIONED CHICKEN CROQUETTES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Metzger Estate in Grand Prairie, Texas in 1994.

Ingredients
  • 3 tablespoon butter
  • 1/4 cup all purpose flour
  • 1/2 cup chicken broth
  • 1/2 cup evaporated milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon lemon juice
  • 1 teaspoon chopped white onions
  • 2 cups cooked chicken minced
  • 3 tablespoons pimientos chopped
  • 1/8 teaspoon ground nutmeg
  • 1 egg yolk beaten
  • 1 cup whole button mushrooms
  • 1 cup bread crumbs
  • 1 egg
  • Canola oil

Directions
  1. Melt butter in a skillet then stir in flour and cook stirring constantly until light brown.
  2. Gradually stir in chicken broth and milk then stir constantly over low heat until mixture is thick.
  3. Blend in all remaining ingredients except breadcrumbs, whole egg and oil.
  4. Allow mixture to cool.
  5. Place breadcrumbs in a plate and the whole beaten egg in a small bowl.
  6. Shape mixture into croquettes.
  7. Dip first in breadcrumbs then into beaten egg and again in the breadcrumbs.
  8. Have oil 3” deep and heat until very hot then fry croquettes until browned.
  9. Drain well on paper towels then serve immediately with your favorite white sauce.
