"A delicious and simple way to use up leftover pasta" is how Noo at recipezaar describes this dish. Sounds good to me and these are delightful!

Ingredients
- 6 to 8 ounces leftover pasta, with any sauce
- 4 eggs
- 2 ounces Parmesan cheese, grated
- 3 ounces butter
- Salt and freshly ground pepper to taste
Directions
- Combine the pasta, eggs and cheese.
- Stir well and season with salt and pepper.
- Heat half the butter in a large, heavy bottomed skillet.
- Pour in the egg mixture.
- Lower the heat and cook for 10 minutes until eggs are just set but soft.
- Slip a knife around the edge to loosen the omelette.
- Turn omelette, using a spatula and cooked side up onto a plate.
- Heat the rest of the butter and slide the frittata, cooked side up into the pan.
- Cook for a few additional minutes.
- Slide onto serving plate, cut into wedges.

Just lay that pasta on me and those eggs.. in fact, we're having fettucine ala carbonara tomorrow evening with just that combination. Thanks for your five!
