Frittata Di Spaghetti Spaghetti Omelette

- 6 to 8 ounces leftover pasta, with any sauce shopping list
- 4 eggs shopping list
- 2 ounces parmesan cheese, grated shopping list
- 3 ounces butter shopping list
- salt and freshly ground pepper to taste shopping list
How to make it
- Combine the pasta, eggs and cheese.
- Stir well and season with salt and pepper.
- Heat half the butter in a large, heavy bottomed skillet.
- Pour in the egg mixture.
- Lower the heat and cook for 10 minutes until eggs are just set but soft.
- Slip a knife around the edge to loosen the omelette.
- Turn omelette, using a spatula and cooked side up onto a plate.
- Heat the rest of the butter and slide the frittata, cooked side up into the pan.
- Cook for a few additional minutes.
- Slide onto serving plate, cut into wedges.
