Ingredients

How to make it

  • Combine the pasta, eggs and cheese.
  • Stir well and season with salt and pepper.
  • Heat half the butter in a large, heavy bottomed skillet.
  • Pour in the egg mixture.
  • Lower the heat and cook for 10 minutes until eggs are just set but soft.
  • Slip a knife around the edge to loosen the omelette.
  • Turn omelette, using a spatula and cooked side up onto a plate.
  • Heat the rest of the butter and slide the frittata, cooked side up into the pan.
  • Cook for a few additional minutes.
  • Slide onto serving plate, cut into wedges.

    This is very similar to something I've made for years.. We also like to throw the mixture into the sandwich maker with spaghetti sauce and mozzarella. Great recipe, thanks!

    I thank you both! Be patient with this one when turning it, ambus. It can be a little difficult to invert. Thanks for your five, my friend. Me too, elaine! Just lay that pasta on me and those eggs.. in fact, we're having fettucine ala carbonara tomorrow evening with just that combination. Thanks for your five!
