Great meatloaf recipe, the bloody mary mix provides wonderful flavor.

Ingredients
  • 2½ pounds ground beef
  • ½ cup dry breadcrumbs
  • 2 eggs
  • 1¼-1½ cups liquid Bloody Mary mix
  • 2 teaspoons thyme, crushed
  • ¼ cup parsley, minced
  • 1 onion, minced
  • Salt & pepper to taste
  • 3 uncooked bacon strips

Directions
  1. Preheat oven to 325 degrees. Combine all ingredients except bacon strips. Shape into loaf; place in loaf pan. Lay bacon on top & bake for 1¼ to 1½ hours or until done. Drain off any accumulated drippings a couple of times during baking and when done.
