Ingredients

1/4 cup chopped green pepper

2 tablespoons oil

1 cup uncooked long grain rice

1/2 cup tomatoes with green chilies

1/4 teaspoon turmeric

1/4 teaspoon cumin

1/2 teaspoon salt

1/4 teaspoon garlic powder

2 cups water

2 tablespoons chopped cilantro

Directions

Sauté onion and green pepper in oil for 2 minutes then add rice and stir until well coated.

Add tomatoes, turmeric, cumin, salt, garlic powder and water then bring to a boil.

Reduce heat and simmer covered, for 20 minutes then add cilantro and serve.
