Texas Style Spanish Rice Recipe
TEXAS STYLE SPANISH RICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hamm Estate in Plano, Texas in 1999.

Ingredients
  • 1/4 cup chopped green pepper
  • 2 tablespoons oil
  • 1 cup uncooked long grain rice
  • 1/2 cup tomatoes with green chilies
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 2 cups water
  • 2 tablespoons chopped cilantro

Directions
  1. Sauté onion and green pepper in oil for 2 minutes then add rice and stir until well coated.
  2. Add tomatoes, turmeric, cumin, salt, garlic powder and water then bring to a boil.
  3. Reduce heat and simmer covered, for 20 minutes then add cilantro and serve.
