An interesting way to serve healthy burgers at a kid's party.

Ingredients
  • 8 crusty multi-grain rolls (if you want to play it safe use white bread rolls)
  • 1 onion, diced
  • 250g lean beef mince
  • 1 zucchini, grated
  • 1 cup corn kernels
  • 150g baked beans
  • 1 egg
  • 50g reduced fat cheese, grated

Directions
  1. Cut the top of each roll, scoop out some of the centre.
  2. Cut scooped out bread to resemble breadcrumbs.
  3. Saute onion in a hot non stick pan, followed by mince, zucchini and corn.
  4. Add beans. Remove from heat, add egg and breadcrumbs.
  5. Place a spoon of mince into rolls followed by cheese then the top with more mince.
  6. Place bread lid on top, wrap in foil and cook at 180 d C for 15mins.
