How to make it

  • Bring a large pot of salted water to a boil.
  • Meanwhile combine the nuts, parsley and garlic in a small food processor (or use mortar and pestle) and turn machine on.
  • With machine running, add the oil gradually, using just enough that the mixture forms a creamy paste.
  • Season to taste with salt and pepper.
  • Cook the pasta, stirring occasionally, until tender.
  • Drain the pasta, reserving some cooking water.
  • Toss pasta with sauce.
  • If mixture appears too thick, thin with a little cooking water OR olive oil.
  • Serve.
