Pasta with Walnuts

- 1 pound linguini OR any long pasta of your choice shopping list
- salt, to taste shopping list
- fresh ground pepper, to taste shopping list
- 1 cup walnut OR pecan halves shopping list
- 1/2 cup loosely packed fresh parsley OR basil leaves shopping list
- 1 garlic clove, peeled shopping list
- 1/2 cup extra virgin olive oil shopping list
How to make it
- Bring a large pot of salted water to a boil.
- Meanwhile combine the nuts, parsley and garlic in a small food processor (or use mortar and pestle) and turn machine on.
- With machine running, add the oil gradually, using just enough that the mixture forms a creamy paste.
- Season to taste with salt and pepper.
- Cook the pasta, stirring occasionally, until tender.
- Drain the pasta, reserving some cooking water.
- Toss pasta with sauce.
- If mixture appears too thick, thin with a little cooking water OR olive oil.
- Serve.
