Vegetarian Chicken Tikka Masala

- 1 1/2 lbs Quorn brand chicken chunks shopping list

- 1 cup plain yogurt shopping list
- 2 tablespoons lemon juice shopping list
- 2 teaspoons ground cumin shopping list
- 1 teaspoons ground red pepper shopping list
- 1 teaspoons black pepper shopping list
- 1 teaspoon cinnamon shopping list
- 1 teaspoon salt shopping list
- 1 piece finely minced ginger (1-inch long) shopping list
- Sauce shopping list
- 1 tablespoon unsalted butter shopping list
- 2 garlic cloves, minced shopping list
- 1 jalapeno, minced shopping list
- 2 teaspoons ground coriander shopping list
- 1 teaspoon ground cumin shopping list
- 1/2 teaspoon paprika shopping list
- 1 teaspoon garam masala (buy in Indian market) shopping list
- 1/2 teaspoon salt shopping list
- 1 (8 ounce) can tomato sauce shopping list
- 1 cup whipping cream shopping list
- 1/4 cup chopped fresh cilantro shopping list
How to make it
- Pre-heat oven to 450 F.
- Pour the Quorn chicken chunks into a large bowl. Add all of the marinade ingredients and mix thoroughly.
- Spread the coated chicken chunks on a cookie sheet and bake for 15 to 20 minutes at 450 F degrees or until browned.
- SAUCE
- For sauce, melt butter on medium heat.
- Add garlic and jalapeno; cook 1 minute.
- Stir in coriander, cumin, paprika, garam masala and salt.
- Stir in tomato sauce.
- Simmer 15 minutes.
- Stir in cream; simmer to thicken, about 5 minutes.
- Add baked chicken to to sauce.
- Simmer 5 minutes.
- Serve over rice with naan.
- You can garnish with cilantro.
