Vegetarian Chicken Tikka Masala Recipe
This is my version of a classic, flavorful Indian dish made with vegetarian chicken chunks. I also toned down the spice level from the original.

  • 1 1/2 lbs Quorn brand chicken chunks
  • Marinade
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 1 teaspoons ground red pepper
  • 1 teaspoons black pepper
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 piece finely minced ginger (1-inch long)
  • Sauce
  • 1 tablespoon unsalted butter
  • 2 garlic cloves, minced
  • 1 jalapeno, minced
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1 teaspoon garam masala (buy in Indian market)
  • 1/2 teaspoon salt
  • 1 (8 ounce) can tomato sauce
  • 1 cup whipping cream
  • 1/4 cup chopped fresh cilantro

Directions
  1. Pre-heat oven to 450 F.
  2. Pour the Quorn chicken chunks into a large bowl. Add all of the marinade ingredients and mix thoroughly.
  3. Spread the coated chicken chunks on a cookie sheet and bake for 15 to 20 minutes at 450 F degrees or until browned.
  4. SAUCE
  5. For sauce, melt butter on medium heat.
  6. Add garlic and jalapeno; cook 1 minute.
  7. Stir in coriander, cumin, paprika, garam masala and salt.
  8. Stir in tomato sauce.
  9. Simmer 15 minutes.
  10. Stir in cream; simmer to thicken, about 5 minutes.
  11. Add baked chicken to to sauce.
  12. Simmer 5 minutes.
  13. Serve over rice with naan.
  14. You can garnish with cilantro.
