Ingredients

1 pkg (6oz) baby spinach

6 tsp. canola oil,divided

4 tilapia fillets(4oz ea)

2Tbs lime juice

2tsp garlic-herb seasoning blend

1 egg ,lightly beaten

1/2c part-skim ricotta cheese

1/4c grated parmesan cheese

Directions

In a non-stick skillet,cook spinach in 4tsp oil till wilted;drain

Meanwhile place tilapia fillets in greased 9x13" baking dish, Drizzle with lime juice and remaining oil. Sprinkle with seasoning blend.

In a small bowl,combine the egg,ricotta cheese and spinach;spoon over fillets. Sprinkle with parmesan cheese.

Bake at 375 for 15-20 mins or till fish flakes easily with a fork.
