Mac And Cheese With Truffle

- 8 ounces elbow macaroni shopping list
- 4 ounces aged white cheddar shopping list
- 2 spring onions shopping list

How to make it
- Cook the macaroni according to package directions just until al dente. Rinse under cold running water, drain well and set aside.
- grate the cheese. Set aside.
- Chop the scallions (green part only) on the diagonal into ¼-inch wide rounds. Set aside.
- Finely chop the truffle. Set aside.
- Position a rack 5-6 inches from the broiler element in the oven; preheat oven on the broil setting.
- Pour the Madeira into an oven-proof 3-quart saucier (or saucepan). Cooking over medium-high heat, reduce the wine until syrupy.
- Stir in the cream, two tablespoons of the chopped black truffle, and a pinch of salt and pepper to taste. Using a Microplane grater, finely grate about ¼ teaspoon fresh nutmeg directly onto the cream. Cook over medium-high heat (do not boil) stirring occasionally, until mixture is reduced by half and the sauce coats the back of a spoon.
- Add the cooked macaroni and half of the grated cheese; stir to warm through. Top the mixture with the remaining cheese and place under a broiler just until top is golden brown. Remove and stir in half of the chopped scallions and ½ teaspoon of white truffle oil. Taste mixture and add additional salt, pepper, and truffle oil as desired.
- Spoon macaroni and cheese onto two serving plates (or bowls) and garnish the top of each serving with additional chopped scallion. Serve immediately.
