Mexican Chicken Recipe
This is my family's favorite casserole. Easy to make. Serve with tortilla chips, homemade salsa, avocado, sour cream or shredded lettuce...or just by itself...it's that good!

Ingredients
  • 1 whole chicken, boiled and off the bone in bite sized pieces. You can use whatever chicken pieces you have...a great use for leftover turkey!
  • 1 pound cubed velvetta cheese
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can rotel tomatoes/green chilies
  • 1 "normal" size bag of tortilla chips
  • approx 1 cup chicken stock
  • salt & pepper to taste

Directions
  1. Crush entire bag of chips! They smaller the better.
  2. In a large bowl, mix all ingredients except chicken stock.
  3. Place in a 9x13 baking dish.
  4. Pour stock over entire dish.
  5. *** optional ***
  6. top with chopped black olives, salsa, or cheddar cheese
  7. Cover and bake at 350 deg for approx 30 to 45 minutes.
