Pan crusted new potatoes

- 32 new potatoes (no. 3 reds work fine)(4 per person) shopping list
- 6 oz butter shopping list
- 1 clove garlic minced shopping list
- 2 T fresh herbs (chives, parsley, or marjoram work well) shopping list
- salt shopping list
- fresh cracked pepper shopping list
How to make it
- Peel a strip around the middle of each potato exposing a ring of the potato flesh (this looks cool and helps with the pan crisping)
- Boil for 10 minutes (don't over cook or they will fall apart)
- Remove and drain (this can be done in advance)
- Melt the butter in a frying pan and add the garlic
- Add half the potatoes to the pan.
- Fry over medium heat until the exposed potato is brown.
- Repeat with the rest of the potatoes
- When done pour the remaining butter into a bowl. Let the solids settle and spoon the remaining T or 2 over the potatoes.
- Garnish with the herbs. Salt and pepper to taste.
