Pan Crusted New Potatoes Recipe
This is an easy way to prepared new potatoes. There is a couple extra steps but they are worth making for the presentation

Ingredients
  • 32 new potatoes (no. 3 reds work fine)(4 per person)
  • 6 oz butter
  • 1 clove garlic minced
  • 2 T fresh herbs (chives, parsley, or marjoram work well)
  • Salt
  • Fresh cracked pepper

Directions
  1. Peel a strip around the middle of each potato exposing a ring of the potato flesh (this looks cool and helps with the pan crisping)
  2. Boil for 10 minutes (don't over cook or they will fall apart)
  3. Remove and drain (this can be done in advance)
  4. Melt the butter in a frying pan and add the garlic
  5. Add half the potatoes to the pan.
  6. Fry over medium heat until the exposed potato is brown.
  7. Repeat with the rest of the potatoes
  8. When done pour the remaining butter into a bowl. Let the solids settle and spoon the remaining T or 2 over the potatoes.
  9. Garnish with the herbs. Salt and pepper to taste.
