How to make it

  • Peel a strip around the middle of each potato exposing a ring of the potato flesh (this looks cool and helps with the pan crisping)
  • Boil for 10 minutes (don't over cook or they will fall apart)
  • Remove and drain (this can be done in advance)
  • Melt the butter in a frying pan and add the garlic
  • Add half the potatoes to the pan.
  • Fry over medium heat until the exposed potato is brown.
  • Repeat with the rest of the potatoes
  • When done pour the remaining butter into a bowl. Let the solids settle and spoon the remaining T or 2 over the potatoes.
  • Garnish with the herbs. Salt and pepper to taste.
