Zucchini Relish Recipe
Ever wonder what to do with all those zucchini from the garden? This recipe is for you! Use in place of sweet pickle relish on dogs, brats, hamburgers, in tuna/chicken/potato salad...etc

Ingredients
  • 10 cups grated zucchini w/ peel ( use the food processor!)
  • 4 chopped onions
  • 1 chopped red bell pepper
  • 1 chopped green bell pepper
  • Like it spicy? Add 1 chopped jalapeƱo (optional)
  • 3 tablespoons salt
  • 2-1/2 cups vinegar
  • 3 cups sugar
  • 1/2 teaspoon turmeric
  • 2 teaspoons nutmeg
  • 2 tablespoons celery seed

Directions
  1. Mix all veggies together w/ salt.
  2. Cover with cold water and let stand overnight.
  3. Drain well.
  4. Mix remaining ingredients in large pot.
  5. Add veggies.
  6. Boil for 30 minutes.
  7. Pack relish into hot, sterilized jars leaving 1" head space.
  8. Seal with lids and rings.
  9. Process 10 minutes in a boiling water canner.
  10. Yields approx 6 pints.
