How to make it

  • For the base, beat the egg and sugar together well and beat in the apricot jam.
  • In a separate bowl, sift the flour together with the bicarbonate of soda and salt.
  • In another dish, melt the butter and add the vinegar and the milk.
  • Add the liquids (butter and vinegar and milk) to the egg mixture (the base) with the flour.
  • Beat well and bake in a greased pie dish at 180C for ½ to ¾ hour.
  • For the Sauce:
  • Melt together all the ingredients for the sauce and
  • then pour over the Malva pudding as soon as it comes out of the oven.
  • You can prick the pudding with a toothpick so that the sauce permeates the whole pudding.
  • Serve the Malva pudding hot in a bowl or on a plate with cream drizzled around.
