Finnish Pancake Recipe
I don't know if this is really Finnish but I loved the sound of it... and to finish it off with fresh peaches or berries sounded great.... the recipe is from the: The Farm A B&B 490 Sunnyside Rd Trout Lake, WA 98650-9715

Ingredients
  • 1/3 cup butter
  • 5 eggs
  • 1 tablespoon sugar
  • 2 cups milk
  • 1 cup flour
  • 1 cup small curd cottage cheese
  • 1 teaspoon baking powder
  • Fresh Berries/Peaches & Confectioner's Sugar (optional)

Directions
  1. Preheat oven 425 degrees, cut butter into small pieces & place in 10" cast iron skillet. Heat in oven until butter is melted.
  2. Combine eggs, & sugar in electric mixer and mix at high speed for 1 minute. Continue to mix while slowly adding milk, then flour, then cottage cheese, then baking powder. Pour blended mixture into hot skillet and bake for 35 minutes until pancake is puffed and beginning to brown.
  3. Remove from oven & let sit 5-8 minutes before cutting. (pancake will fall)
  4. Sprinkle with confectioner's sugar and serve with fresh berries or peaches and warm maple syrup.
