bacon wraped cottage fries with cheddar and horseradish cream

- 6 russet potatoes shopping list
- 1 lb. bacon shopping list
- 8 oz. good sharp cheddar grated shopping list
- 8 oz. sour cream shopping list
- 2T. horseradish (more or less depending on your taste) shopping list
- oil for frying shopping list
How to make it
- Boil potatoes till just tender (8-10 min.) allow to cool completely in an ice bath works well
- Slice potatoes about an inch thick
- Wrap each slice with a piece of bacon secure it with a tooth pick
- fry the potatoes in batches until bacon is cooked and potatoes are golden
- Drain on paper towels season with salt arrange on an oven proof platter
- Top with cheddar and place under the broiler to melt the cheese
- For The Horse Radish Cream
- Combine sour cream and horse radish allow flavors to meld
- Serve Cottage Fries with The cream
