Zucchini-Carrot Muffins

- Sift separately: shopping list
- 2 C flour shopping list
- 2 tsp baking soda shopping list
- 1/4 tsp baking powder shopping list
- 1 T cinnamon shopping list
- Mix together: shopping list
- 3 eggs shopping list
- 1 C vegetable oil shopping list
- 1 1/2 C sugar shopping list
- 2 C grated zucchini shopping list
- 1 C grated carrot shopping list
- 2 tsp vanilla shopping list
- 1 tsp lemon extract shopping list
- Stir in: shopping list
- 1 C raisins shopping list
- 1 C sunflower seeds(without shells of course) shopping list
How to make it
- Sift together first 4 ingredients
- In a separate bowl, Mix together sugar oil and eggs.
- Add zucchini, carrots, vanilla and lemon extract mix well
- Add the sifted ingredients to this mixture and mix well.
- Stir in raisins and sunflower seeds.
- Fill 24 med size greased or paper lined muffin tins 2/3 full.
- Bake at 350 degrees for 20 min
- These freeze really well for up to 3 months.
- I have used apple sauce in place of half the oil before as well.
