GARLIC FETA CHICKEN This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Duncan Estate in Desoto, Texas in 1991.

Ingredients
  • Juice from 1 lemon
  • 2 cinnamon sticks
  • 4 cloves garlic minced
  • 16 ounce can cut tomatoes with basil
  • 1 bay leaf
  • 1/8 teaspoon freshly ground black pepper
  • 1/4 cup dry sherry
  • 1 white onion chopped
  • 1 pound boneless skinless breasts trimmed of fat and cut into 4 pieces
  • 1 teaspoon olive oil
  • 1/4 cup crumbled feta cheese
  • 8 ounces egg noodles
  • Mint sprigs for garnish

Directions
  1. Combine lemon juice, cinnamon, garlic, tomatoes, bay leaf, pepper, sherry and onions.
  2. Stir well then place in bottom of crock pot.
  3. Brown chicken on both sides in oil in nonstick skillet over medium high heat 4 minutes.
  4. Transfer chicken to the crock pot then cover and cook on low setting for 10 hours.
  5. Discard bay leaf then during last half hour cook noodles separately then drain and keep warm.
  6. Serve topped with chicken and garnished with mint sprigs.
