Ingredients
  • 1 C real butter
  • 1/3C heavy cream
  • 2 C Flour
  • Granulated white sugar for sprinkling (optional)
  • 1/2 tsp almond extract
  • 3/4 C powdered sugar
  • 1/4 C butter
  • 1 egg yolk

Directions
  1. For cookie dough; Cream 1 C butter well and beat in the heavy cream.
  2. Add flour a little at a time and stir well.
  3. Wrap and chill at least 2 hrs.
  4. Roll dough very thin, about 1/8" thick and cut with small round or fluted round cutters.
  5. Sprinkle rounds with sugar if desired(optional)
  6. Using a spatula, place cookies on ungreased cookie sheet.
  7. Pierce each cookie several times with a fork.
  8. Bake about 10 minutes at 350 degrees. Cookies should not brown much at all.
  9. For filing; mix remaining ingredients well.
  10. Put two wafers together to make sandwiches with about 1/2 tsp filling.
  11. Enjoy with a nice hot cup of tea!
