A bean salad redolent with traditional Mexican seasonings. This is great as a salad but can double as a salsa.

Ingredients
  • 1 - 15 oz can of black beans drained and rinsed until the water runs clear
  • 1 1/2 c. fresh, frozen(thawed), or canned corn kernels
  • 2 tomatoes diced
  • 1 red pepper diced
  • 1 green pepper diced
  • 1/2 c red onion diced
  • 2 fresh jalapeno seeded and diced
  • 1/2 c chopped cilantro
  • 1/3 c olive oil
  • 1/3 c fresh lime juice
  • 1 teas Kosher salt
  • 1 teas cumin
  • 1 teas New Mexico chile powder

Directions
  1. Diced all the vegetables to a similar size, a little larger than a black beam
  2. Combine all the ingredients and toss gently to mix and coat
  3. Chill and serve
  4. Great as a salad or a salsa
