Black Bean Salad

A bean salad redolent with traditional Mexican seasonings. This is great as a salad but can double as a salsa.
Ingredients
- 1 - 15 oz can of black beans drained and rinsed until the water runs clear shopping list
- 1 1/2 c. fresh, frozen(thawed), or canned corn kernels shopping list
- 2 tomatoes diced shopping list
- 1 red pepper diced shopping list
- 1 green pepper diced shopping list
- 1/2 c red onion diced shopping list
- 2 fresh jalapeno seeded and diced shopping list
- 1/2 c chopped cilantro shopping list
- 1/3 c olive oil shopping list
- 1/3 c fresh lime juice shopping list
- 1 teas kosher salt shopping list
- 1 teas cumin shopping list
- 1 teas new mexico chile powder shopping list
How to make it
- Diced all the vegetables to a similar size, a little larger than a black beam
- Combine all the ingredients and toss gently to mix and coat
- Chill and serve
- Great as a salad or a salsa
