Ingredients
  • 1 cucumber.
  • 2 limes (if not available use lemons).
  • 500 gr cod fish filet.
  • 1 egg.
  • 4 tbs flour.
  • 2 tbs parsley chopped.
  • 2 cloves garlic pressed.
  • 1 small onion chopped.
  • 2 spring onions sliced.
  • 1 hot red pepper (ca 10 cm).
  • 100 ml ginger syrup ( Royal Mail or house made).
  • 2 tbs olive oil.
  • salt and pepper to taste.

Directions
  1. Slice the cucumber lenghtwise with a peeler in thin long strips, sprinkle with a little salt and let rest.
  2. Clean limes shred 1 ts of the skin and press the juice out.
  3. Cut fish in pieces and mash with llime rind, egg, flour, garlic and onion till you have a smooth paste , taste with pepper and salt, take paste out of the blender.
  4. Add parsley and 1/2 of the spring onion slices to the paste and mix, form with wet hands 8 patties.
  5. Cut pepper in long thin strips, if you want the sauce hot use the seeds, if not throw seeds away.
  6. Bring ginger syrup to a boil add pepper strips and cook 10 min on low heat, close heat , add lime juice and mix.
  7. Heat oil in a frying pan and bake patties 5 min on each side till done.
  8. Dry cucumber slices with kitchen paper and put on 4 plates, put 2 patties on each plate and top with the rest of the spring onion, serve with sweet pepper sauce.

Sounds divine, I just need to find out about the ginger sauce, what would be comparable in the states? and beauty flag for your picture....:)


The ginger sauce: buy 150 gr fresh ginger , peel and cut in cm pieces, cook with 300 ml water and 200 gr sugar till sauce is thick and ginger pieces have dark color, you can make the syrup thicker or less thick adding sugar or water, the ginger pieces chopped give a nice flavour to cakes etc.
