Almost Cheeseless Pasta Casserole

- Zest of 1 large lemon shopping list
- 8 ounces dried whole wheat pasta, penne OR comparable in size shopping list
- 1 1/2 cups butternut squash, peeled and sliced into quarter-sized pieces shopping list
- 3 good handfuls kale, chard OR spinach, loosely chopped shopping list
- 2 cups plain Greek yogurt shopping list
- 2 egg yolks shopping list
- 3 cloves garlic, chopped shopping list
- 1/2 teaspoon fine grain sea salt shopping list
- 2/3 cup sliced almonds, toasted shopping list
- 1/4 cup kalamata olives, pitted and torn into pieces shopping list
- Scant 1/4 cup feta cheese, crumbled shopping list
- 1/4 cup fresh mint, chopped shopping list
How to make it
- Preheat oven to 400 degrees F. with rack in middle.
- Butter or oil and 8x12" baking dish OR two smaller gratin dishes.
- Sprinkle with lemon zest and set aside.
- Bring a large pot of salted water to a boil.
- Cook pasta until al dente.
- Just 10 seconds before pasta is done, stir in squash and kale.
- Quickly and carefully drain the pasta, squash and kale.
- Run cold water over the trio (just enough to stop the cooking).
- Shake off any excess water and set aside.
- While waiting for the pasta water to boil, whisk together the yogurt, egg yolks, garlic and salt in a large mixing bowl.
- Set aside until pasta is ready.
- Then, add the pasta mixture to the yogurt mixture and stir.
- Stir in the almonds.
- Scoop everything into the prepared dish(es), sprinkle with olive and Feta.
- Bake for 25 to 30 minutes.
- Remove from oven.
- Serve sprinkled with a bit of fresh chopped mint and remaining almonds.
