Mellow Mushroom Restaurant , a Pizza chain in the south, Net discussion about their secrets to a great pizza dough. Supposedly their dough is made with a top grade wheat flour, spring water and no sugar. I find that molasses is a type of sugar though and don't know if the no sugar is just a form of speech meaning no "white" sugar. Read more I did try molsses in my pizza dough and it came out fine- but I saw /tasted no major difference using sugar or the molasses.- not even in the flavor.
