Ingredients
  • 2 pounds red snapper fillets
  • 1 cup white wine
  • 1/3 cup lemon juice
  • 2 tbs dijon mustard
  • 3 cloves garlic, crushed
  • 2 bay leaves
  • 1 teas hot sauce

Directions
  1. Arrange fillets in a 9x13 inch baking dish
  2. combine remaining ingredients; pour over fish
  3. cover and refrigerate at least 2 hours, basting occasionally
  4. preheat oven to 375
  5. remove fish from marinade
  6. arrange fish fillets on a rack in a large baking pan
  7. bake 20 minutes or until fish flakes easily with a fork
  8. serve on a bed of angel hair pasta tossed with butter and parsley
