Turkey And Potato Soup With Canadian Bacon Recipe
While Canadian bacon has a fraction of the calories and slightly more protein than regular bacon,it's higher in sodium. You can substitute pancetta. This is a very tasty,comforting soup. From My recipes.

Ingredients
  • 1Tbs canola oil
  • 11/2c chopped onion(about 1 large)
  • 1c chopped celery
  • 2 carrots,halved lengthwise and thinly sliced(about 1c)
  • 1 oz. Canadian bacon or pancetta
  • 3c chicken broth
  • 3c chopped cooked turkey(about 1lb)
  • 21/2c mashed cooked peeled baking potatoes
  • 1Tbs chopped fresh sage
  • 1/4tsp fresh ground pepper
  • Sage sprigs(optional)

Directions
  1. Heat oil in dutch oven over med. heat. Add onion,celery,carrots and bacon;cook 6 mins,stirring occasionally. Add broth,turkey,,potatoes,and chopped sage,stirring with a whisk till blended.;bring to a boil. Reduce heat,and simmer 10 mins. Stir in pepper. Garnish with sage sprigs,if desired.

I love Canadian bacon. This combination sounds hearty and good. Great for a cold winter day!


I like canadian bacon, too.They are calling for a cold front, with snow, to move in here, Sunday night so this will be great for Monday.
