This time of year the ATAULFO mangoes make thier way into the markets. They are by far the best mango. Combined with pineapple and cilantro this makes a great slasa to eat with fish or chicken, or by the spoonful.

The other day I made a dish that I call "Mango Chicken" which is marinated boneless chicken breast or thighs set on top of basmati rice cooked with cilantro and covered with a heated Mango salsa. I used to Mango salsa from Cosco which is quite good, but I would prefer to make my own, so when I found this recipe, I was delighted because I didn't feel like experimenting with ingredients for salsa on my own.
