Grilled Salmon Hash

- 1 1/4 to 1 1/2 cups of leftover grilled salmon (basted in bourbon maple glaze) shopping list
- 4 large baked potatoes, cold, cut in chunks with the skin left on shopping list
- 1 large red pepper, chopped (or one half yellow and half red) shopping list
- 1 large yellow onion, chopped shopping list
- 1 clove of garlic shopping list
- 1 generous tbsp of grill seasoning shopping list
- several grinds of black pepper shopping list
- 1 spoonful of capers drained shopping list
- 6 to 8 eggs shopping list
- olive oil and/or butter shopping list
- parsley flakes shopping list
- reserved bourbon glaze shopping list
How to make it
- Plan on leftovers with the glazed salmon.
- Refrigerate over night.
- Bake your potatoes the night before. Let cool completely
- Chop chilled potatoes in large chunks.
- Chop onion, peppers, garlic.
- Heat cast iron griddle to medium high heat.
- Swipe with olive oil.
- Fry onions, peppers.
- Top with potatoes.
- Season liberally with grill seasoning and pepper.
- Add garlic, and chunks of salmon.
- Toss until heated through.
- Sprinkle on capers and parsley flakes.
- Top each serving of salmon hash with over-easy eggs.
- Sprinkle with parsley and a drizzle of warmed up bourbon glaze.
